Desarrollan impresora 3D capaz de generar alimentos comestibles

Científicos buscan que esta comida sea de fácil deglución controlando su tamaño y temperatura.

Científicos mexicanos están desarrollando una impresora 3D que, mediante un proceso de manufactura aditiva, tiene la capacidad de crear alimentos comestibles e incluso beneficiosos para la salud, informó este jueves el Consejo Nacional de
Ciencia y Tecnología (Conacyt).

Esta tecnología tiene la capacidad de preparar alimentos blandos y con formas que facilitan su deglución, además de estar adicionados con bacterias probióticas que ayudan a equilibrar la salud intestinal, indicó la investigadora Centro de Investigación y Asistencia en Tecnología y Diseño del Estado de Jalisco (Ciatej) Zaira Yunuen.

Además, la impresión de alimentos representa una alternativa para individuos que no pueden masticar alimentos más duros de lo normal. Para obtener un alimento generado de manera artificial primero se accede a un software que modela la figura que se quiere imprimir y, posteriormente, la impresora se encarga de ir acomodando el material comestible en capas, dotando a la figura de un aspecto tridimensional.

La única diferencia entre una impresora de papel y la Interlatin Colibrí 3D es el cartucho, que reemplaza la tinta tradicional por un material comestible. Para manipular los materiales comestibles se deben tomar en cuenta sus propiedades fisicoquímicas y reológicas, acotó la investigadora.

Lograr una buena impresión de los alimentos conlleva atender varios parámetros, como la composición del material comestible, la concentración y proporción de los ingredientes para rellenar el cartucho de impresión o la temperatura de impresión.

A esto se le agrega un control de la temperatura del comestible dentro del cartucho, así como la viscosidad del alimento para que pueda fluir con facilidad.

Al encontrarse todavía en fase prototípica, los primeros cartuchos que se han producido contienen merengue para pasteles y chocolate. Sin embargo, los científicos ya están trabajando en producir cartuchos que contengan diversos tipos de alimentos como mole, guacamole, masa para hot cakes, gelatinas y patés.
